There's an actual reason Ella supposed that vampires were good at seeming like normal people-- the glamour, and a low-level charm that vampires naturally project that tells the victim "nothing is wrong here" until it's far too late to escape. I was never a party girl like Ella, but I did hang out with a group that would stay up the entire night! Nothing weird about that, after all.
But the glamour and charm has its limits, the illusion can be broken. It can also be forgotten, denied, recalled only as a strange dream if at all. Many hunters are those who made the effort not to forget-- not to fall back under the affect of the glamour. Some of them just never were affected to begin with.
